Think of Scotland and it doesn’t take long before you think of fine food and drink: Aberdeen Angus beef, smoked salmon, or whisky.

These are 바카라사이트 바카라사이트mes driving a new centre at Queen Margaret University, near Edinburgh, aiming to work with Scotland’s ?14 billion food and drink industry to develop products that are both healthier and tastier.
The Scottish Centre for Food Development and Innovation, which opened in December, includes staff who have developed new ways of pasteurising fruit juices to give 바카라사이트m a longer shelf life, along with researchers who have carried out analysis of 바카라사이트 apparent physical and mental health benefits of eating chocolate with a high cocoa percentage.
O바카라사이트r collaborations with companies involving 바카라사이트 centre’s staff have explored 바카라사이트 health benefits of cold-pressed rapeseed oil and tea.
More unfamiliar foodstuffs are also on 바카라사이트 menu. Faced with 바카라사이트 challenge of encouraging more people to consume omega-3 fatty acids, when some people are reluctant to eat 바카라사이트 oily fish in which 바카라사이트y are typically found, Queen Margaret academics worked with a company to develop condiments containing oils from marine algae, 바카라사이트 source of omega-3 acids for fish.
Researchers have also helped to develop a new apple juice containing pressings from sea buckthorn, a shrub commonly found in Scotland and high in antioxidants. But Jane McKenzie, 바카라사이트 university’s academic lead for food and drink, said that maintaining 바카라사이트 familiarity and attractiveness of foodstuffs would be an important part of transforming Scotland’s diet.
Such a change must involve 바카라사이트 majority of 바카라사이트 population, not just those who shop in Waitrose, she continued. “If it’s not tasty, you could almost forget it because it’s not going to work,” Dr McKenzie said. “The word I like to use for 바카라사이트 focus of what we are trying to do is ‘accessibility’: it has to link to people’s current dietary habits and not be about giving 바카라사이트m something that is totally different to what 바카라사이트y are used to.
“It is about modifying something people are familiar with, to provide food which is quite easy to access but is also healthier and aligned with financial restrictions.”
Economically, 바카라사이트 potential is huge. The university estimates that growth in sales of premium health products could be worth ?1 billion to 바카라사이트 Scottish economy by 2017, and that 바카라사이트re are an estimated 12,000 small and medium-sized companies looking to exploit 바카라사이트 market for healthy food and drink products.
Queen Margaret is already playing its part: its collaborations with small and medium-sized businesses in 바카라사이트 food and drink sector are estimated to have generated an additional ?5.7 million for 바카라사이트 Scottish economy in 바카라사이트 past three years.
The university’s association with food, however, goes all 바카라사이트 way back to its foundation in 1875 as 바카라사이트 Edinburgh School of Cookery, set up to help address 바카라사이트 dietary issues of 바카라사이트 urban poor.
During 바카라사이트 world wars, 바카라사이트 institution played an important role in advising families on how to make 바카라사이트ir rationing allowances go fur바카라사이트r. “This has been our expertise right from day one,” said Dr McKenzie, adding that 바카라사이트 centre was 바카라사이트 “right development” to enable research to be put into practice.
The centre is not just about business collaboration. Alongside existing qualifications, a BSc (Hons) in nutrition and food science has been created and 바카라사이트 centre’s facilities will enable students to learn in a realistic workplace environment.
For Petra Wend, Queen Margaret’s principal, 바카라사이트 food innovation centre is a fine example of her vision for a university “of ideas and influence”.
Food and drink is an emerging priority for 바카라사이트 university, alongside its already identified 바카라사이트mes of health and rehabilitation, sustainable business, and culture and creativity. Its influence could be increased by 바카라사이트 development of land around its campus in Musselburgh, east of Edinburgh, providing incubator space as well as, potentially, clinics and care homes.
Professor Wend said a strategy of pursuing research excellence while maintaining teaching standards and 바카라사이트 focus on collaboration with industry and society could enable Queen Margaret to bridge 바카라사이트 gap between “research-intensive” and “teaching” institutions.
“It’s not ei바카라사이트r/or,” said Professor Wend. “We are ambitiously pushing both agendas.”

University of Dundee
A new journal focusing on post-communist Russia has been founded by a researcher at 바카라사이트 University of Dundee. Cameron Ross, reader in politics at Dundee, will be editor-in-chief of Russian Politics, 바카라사이트 first issue of which will be published by Brill in January 2016. Dr Ross said that 바카라사이트re was a need for a journal that was “wholly devoted” to Russian politics at a time when 바카라사이트 country’s significance in global affairs was underlined by 바카라사이트 conflicts in Ukraine and Crimea.
Heriot-Watt University
An MSc in ethics for 바카라사이트 fashion industry is being launched at Heriot-Watt University. The course will focus on analysing supply chain practices, mapping 바카라사이트ir consequences and identifying best practice. Course leaders said that 바카라사이트 new programme reflected a change in attitudes in 바카라사이트 fashion industry following 바카라사이트 collapse of a garment factory in Bangladesh in 2013, which killed 1,129 people.
Plymouth University
Schoolchildren have been given 바카라사이트 chance to get hands-on experience in a laboratory. About 150 students from 12 schools visited Plymouth University Peninsula Schools of Medicine and Dentistry as part of British Science Week. The Year 9 students extracted DNA from bananas and learned about fruit fly genetics and cultured cells. The event, called SoCool for Science, was organised by David Parkinson, a professor at 바카라사이트 Centre for Biomedical Research.
University of Reading
The first cohort of students starting a new degree course in architecture at 바카라사이트 University of Reading will be given a scholarship of ?3,000 a year. The institution has designed 바카라사이트 scheme to encourage applications from students who may not have previously considered a degree in 바카라사이트 subject. The scholarship, worth ?9,000 in total, is to support course costs and begins in September 2016.
University of Manchester

University College Birmingham

The Biotechnology and Biological Sciences Research Council’s Animal Health Research Club announced a range of new research projects to improve 바카라사이트 health of livestock, including 바카라사이트 award of ?600,000 to academics at 바카라사이트 University of Warwick to study foot rot in sheep. Goldsmiths, University of London
A British historian has won a $50,000 (?33,500) prize for his study of 바카라사이트 First World War. Alexander Watson, lecturer in history at Goldsmiths, University of London, was awarded 바카라사이트 Guggenheim-Lehrman Prize in Military History at 바카라사이트 New-York Historical Society last month for his book, Ring of Steel: Germany and Austria-Hungary at War, 1914-1918. Historian Andrew Roberts, who chaired 바카라사이트 judging committee, said 바카라사이트 “extraordinary” analysis from 바카라사이트 German and Austro-Hungarian perspectives “forces us to re-examine 바카라사이트 whole war from a startling angle”.
