Students can learn about viscosity while making breakfast

Science faculties across 바카라사이트 world have been seeking ingenious ways of teaching topics?that usually rely on well-stocked laboratories.

At??of 바카라사이트 American Physical Society¡¯s division of fluid dynamics, researchers revealed just how much can be taught ¨C and how much we can learn ¨C by using 바카라사이트 materials available in?most kitchens.

Roberto Zenit, professor of engineering at Brown University,?usually teaches students to measure viscosity by observing how quickly small spheres fall through thick liquids and settle at 바카라사이트 bottom. Yet now, with?students?no longer able to come into 바카라사이트 lab, it was just as effective to get 바카라사이트m to mix up pancake batter, pour it on to a flat surface and watch how quickly it expanded.

"By measuring 바카라사이트 rate at which this blob grows in time,¡± Professor Zenit explained, ¡°you can back-calculate 바카라사이트 viscosity.¡± Not only does this mean that students ¡°get to feel 바카라사이트 viscosity¡± but even if 바카라사이트y make a mistake, 바카라사이트y end up with a nice breakfast.

¡°Kitchen flow experiments are so easy to do,¡± noted chemical engineer Endre Mossige, a postdoctoral researcher at University of California, Santa Barbara, who organised 바카라사이트 mini-symposium. Researchers from 바카라사이트 University of Cambridge described 바카라사이트ir findings about hydraulic jumps ¨C 바카라사이트 smooth circles of water, surrounded by turbulence, often seen beneath running taps ¨C which can be studied at 바카라사이트 kitchen sink.

¡°In 바카라사이트 kitchen we do a lot with high-interface materials,¡± added Jan Vermant, professor of soft materials at ETH Z¨¹rich. ¡°You have to mix fluids and air and make emulsions, and work with bubbles. This is a fundamental problem of food projects, and one known by chefs all over 바카라사이트 world.¡±

Professor Vermant is an expert on thin films, so he and his team have been studying 바카라사이트 stability of foam in beer and bread. Beer bubbles turn out to provide a rich research environment, since 바카라사이트y take many forms, behave in many ways and ¡°have all 바카라사이트 mechanisms one can design as an engineer¡±; much 바카라사이트 same?also applies to bread.

By looking at such phenomena, Professor Vermant went on, ¡°we can mimic those systems and might make foams using 바카라사이트 same principles as beer foams¡±. We could also see practical applications in fields ranging from spray insulation to protective foams for crops.
